Slow Cooker BBQ Ribs – Tender and Flavorful

Slow Cooker BBQ Ribs

Nothing beats the convenience of slow cooker ribs that come out fall-off-the-bone tender with minimal effort. This recipe combines a homemade spice rub with a tangy BBQ sauce that infuses the meat over hours of low and slow cooking, creating ribs that are juicy, flavorful, and perfect for any gathering.

Ingredients

  • 2 racks baby back ribs, trimmed
  • 1 cup BBQ sauce
  • 1/2 cup apple juice or cider vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper (optional)

Instructions

  1. Pat the ribs dry and remove the membrane from the back if desired. Cut the racks in half to fit in your slow cooker.
  2. In a small bowl, mix together the brown sugar, smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper.
  3. Rub the spice mixture generously all over both sides of the ribs.
  4. Place the ribs in the slow cooker, standing them up or laying them flat as they fit.
  5. In a bowl, whisk together the BBQ sauce, apple juice, and Worcestershire sauce. Pour over the ribs.
  6. Cover and cook on low for 7 to 8 hours, or on high for 4 to 5 hours, until the meat is very tender and pulls away from the bones easily.
  7. Remove the ribs from the slow cooker and brush with extra BBQ sauce if desired.
  8. Serve hot with your favorite sides.

Practical Tips

  • Extra caramelized edges: For a more restaurant-style finish, place the cooked ribs on a baking sheet and broil for 2 to 3 minutes after slow cooking.
  • Membrane removal: Removing the thin membrane from the back of the ribs allows the spice rub to penetrate better and makes them easier to eat.
  • Adjust the heat level: If you prefer milder ribs, reduce or omit the cayenne pepper. For extra heat, add more cayenne or a pinch of hot sauce to the sauce mixture.

Storage

Store leftover ribs in an airtight container in the refrigerator for up to 3 days. Reheat gently in a 350°F oven for about 15 minutes, or warm them slowly in the slow cooker on low heat to maintain tenderness.

Common Questions

Can I cook these ribs on high heat instead of low? Yes, you can cook them on high for 4 to 5 hours. However, low and slow cooking for 7 to 8 hours produces more tender results and allows the flavors to develop more deeply.

What sides pair well with slow cooker BBQ ribs? These ribs go wonderfully with classic sides like coleslaw, baked beans, cornbread, mac and cheese, or grilled corn on the cob.

Can I prepare the rub ahead of time? Absolutely. Mix the dry spices the night before and store in an airtight container. You can even rub the ribs a few hours in advance and refrigerate them until you’re ready to add them to the slow cooker.
